We discovered sustainability is a path.
Being located inside the National Park allowed us to transform an ideal of respect and care for nature into a concrete path toward sustainability. We grow without agrochemicals, energy is solar and hydroelectric, we treat the waters. Sustainability is a path walked daily, a goal and a work in constant process. It's in the respectful use of resources — in using and returning to the earth, closing the cycle.
Organic production, biodiversity and forgotten varieties.
Almost without knowing it we took on the challenge of growing in Patagonia at 1,000 meters of altitude. The growing window goes from late September to March, and a 300 m² greenhouse allows us to grow temperate-climate vegetables and extend the season with greens, lettuces and chards to complement those that naturally resist the cold, like cabbages and roots.
We're excited about biodiversity and the rescue of forgotten varieties. They not only enrich the kitchen but the ecosystem and health. Here bees are our great allies — we discovered that without them production doesn't complete its cycle.
Renewable and managed in real time.
The property works as an off-grid network. For cooking and heating we combine different systems by season, to minimize the use of hydrocarbons.
The water we drink, irrigate and cook with comes from a spring. Treated with a nitrifying bed system, it returns clean to the environment.
Animals close the cycle of the land.
Kitchen scraps and garden waste go to the hens, which in turn graze freely throughout the property completing their natural feed. This makes the «free-range» eggs richer and more nutritious, and the guano they produce becomes the compost that nourishes the garden.
Our dairy cows, beyond milk, contribute the essential ingredient for vermicompost — a high-quality type of compost.
